The Basque Country, straddling the mountains and coast between Spain and France has gathered a world-class reputation for its unique cuisine, which combines influences from both neighbours with fresh local ingredients from the land and sea. Fresh Atlantic seafood, pasture-raised lamb and beef cooked over hot coals, and local specialities such as Espelette pepper and Idiazabal sheep's cheese, are served alongside the local Txakoli white wine and Basque cider. In the company of author and food writer Carolyn Boyd, who works for the legendary Roux family, we will explore the best of the French Basque Country, meeting producers, visiting food markets and dining in some of the region’s best restaurants in Bayonne, Biarritz and St Jean de Luz.
