Named for the storks which are omnipresent in the region, the city of Sigüenza is 90 minutes by car or train from Madrid. Little-visited by tourists, its picturesque mediaeval centre is leads to the imposing Romanesque cathedral, constructed from the 12th to 16th century. On the hillside overlooking the city is the Parador, housed in the Medieval castle that housed in a former 12th century fortress that was built over an Arab citadel. The crenelated façade is as impressive as the galleried courtyard and the 13th century Romanesque chapel inside. The public areas are grand and imposing, but the rooms are comfortable, many have wooden balconies, whilst the barrel-vaulted dining room is the perfect setting in which to enjoy hearty local cuisine.
